QUICK + EASY ENTERTAINING TIPS

citrus-marinated pork skewers

This is a nice, citrus-flavored marinade for pork that’s perfect for entertaining. For a smaller portion, simply cut recipe in half.

Marinade
Zest and juice from 1 orange
Zest and juice from 1 lime
3 tablespoons canola oil
3 tablespoons light brown sugar
1 teaspoon chili powder

1 pork tenderloin, cut into equal chunks, about 3-inches in size
7-8 wooden skewers, for serving
1/2 fresh pineapple, cut into cubes
1-2 tablespoons canola oil
Salt, to taste
Freshly ground black pepper

Cooking spray, for greasing

1. In a medium bowl, combine ingredients for marinade. Add pork, and toss to combine. Cover with plastic wrap and refrigerate for about about 4 hours.
2. Soak skewers for 10 minutes.
3. Preheat grill or grill pan to medium heat. Coat with cooking spray.
4. Thread one piece of pork onto skewer, followed by a piece of pineapple. Repeat until you have approximately 3 pieces of pork and 2 pineapple pieces on skewer. Repeat with remaining skewers.
5. Drizzle pork skewers with canola oil and season with salt and pepper. Place skewers on grill and cook for 4-5 minutes per side, or until cooked through.
6. Meanwhile, bring remaining marinade to a boil; reduce heat to low and allow to simmer until pork is cooked.
7. Transfer skewers to a serving platter and serve along with extra sauce.

Serves 6.
