chipotle meatballs

This recipe was adapted from Rick Bayless. Be sure to serve them with toothpicks for an easy, bite-sized appetizer.

Cooking spray, for greasing
1 slice bacon, roughly chopped
1 clove garlic, minced
1 egg, beaten
3 tablespoons breadcrumbs
1/2 pound ground turkey
Salt, to taste
Freshly ground black pepper

1/8 teaspoon cumin
1/8 teaspoon chili pepper

1 15-ounce can tomato sauce
2 tablespoons chipotle salsa

Cooked white rice (about 1 1/2 cups), for serving

1. Preheat oven to 375°F. Lightly coat a baking sheet with cooking spray and set aside.
2. In a food processor, combine bacon and garlic until pulse until mixture in finely minced. Add 3/4 egg (discard remaining egg) along with breadcrumbs and mix until combined. Transfer to a medium bowl and add turkey. Season with salt and pepper. Add cumin and chili pepper and using your hands, gently mix until combined. Form into bite-sized meatballs and place on prepared baking sheet. Bake for 15-20 minutes.
3. Meanwhile, combine tomato sauce and chipotle salsa in a medium saucepan and place over low heat. After meatballs have been cooking for 15-20 minutes, remove from oven and pour about 1/2 of tomato sauce mixture over meatballs. Return to oven and cook for another 15-20 minutes. Return remaining tomato sauce to low heat.
4. Place white rice down center of a serving platter. Place meatballs on rice, and top with tomato sauce from baking sheet and remaining sauce from saucepan. Serve warm.

Makes 8-10 meatballs.
