QUICK + EASY ENTERTAINING TIPS

chilled strawberry soup

As a kid, this was one of my favorite soups. It’s really light and refreshing and a great way to use up a lot of strawberries at once. When making the soup, adjust the amount of sugar based on how sweet the strawberries are.

1 pound fresh strawberries, hulled and sliced (about 3 cups)
1/2 cup ice
1/2 cup cold water
2 1/2 tablespoons sugar
1 1/2 tablespoons sour cream, plus extra for serving, optional

Place strawberries in a blender along with ice and water and combine. Add sugar and sour cream and process until smooth. Adjust sugar if necessary. Pour into serving glass and chill until ready to serve. Spoon an extra teaspoon of sour cream in center of serving glass and drag a toothpick through the cream to make a swirl (if using).

Serves 1-2.
