chickpea bites with lemon-yogurt sauce

I have a bit of obsession with chickpeas and probably eat them more than the average person but they’re really good for you and are so quick and easy when you use them straight from a can. I stock up on them and always have them in my pantry for a quick batch of hummus or for this, an easy recipe for a lunch or dinner. You can flavor these little bites up any way you like, or with whatever spices you prefer but I like the combination of cumin with chickpeas, it just goes together perfectly.

1 15-ounce can garbanzo beans (chickpeas), drained and rinsed
1 egg, beaten
1 teaspoon cumin
1 teaspoon coriander
Salt, to taste
Freshly ground black pepper
2 tablespoons low-sodium vegetable stock
2 tablespoons plain breadcrumbs, plus extra for dredging
1 tablespoon finely minced flat-leaf parsley
Olive oil, for frying

Lemon-Yogurt Sauce
6 ounces Greek-style plain yogurt
Zest and juice from 1/2 lemon

1. In a food processor or blender, combine chickpeas, egg, cumin, coriander, salt, pepper and vegetable stock. Blend until combined, leaving some chickpeas in larger pieces. Transfer to a bowl and stir in breadcrumbs and parsley. Shape into 8 small disks and set aside.
2. In a medium sauté pan, heat oil over medium heat. In a shallow dish, add breadcrumbs and season with salt and pepper. One at a time, coat both sides of each chickpea bite and add to pan. Work in batches if necessary as to not overcrowd pan. Cook until golden brown on both sides.
3. Meanwhile, combine yogurt, lemon zest and juice in a small bowl. Serve lemon-yogurt sauce along with warm chickpea bites.

Makes 8 bites.
