QUICK + EASY ENTERTAINING TIPS

chicken satay with peanut dipping sauce

A really simple peanut sauce is a great accompaniment for simple grilled chicken. You can easily cut the chicken pieces in half again, making 8 bite-sized pieces for more of an appetizer, or increase the whole recipe for easy entertaining.

2 boneless breasts of chicken
6 ounces plain Greek-style yogurt
1 clove garlic, finely minced
1/2 teaspoon finely minced fresh ginger


4 wooden skewers, for serving

Cooking spray, for greasing

Peanut Dipping Sauce
1/2 cup creamy peanut butter

1 tablespoon plus 2 teaspoons soy sauce
2 teaspoons light brown sugar

1/4 teaspoon finely minced fresh ginger

1/4 teaspoon red chile paste
1/2 cup warm water

1. Cut each chicken breast in half lengthwise, making 4 pieces.
2. In a medium bowl, combine yogurt, garlic and ginger. Add chicken and coat all over with yogurt. Cover and refrigerate for up to 4 hours.
3. Soak skewers for 10 minutes.

4. Thread chicken pieces onto skewers, one piece per skewer. Set aside.

5. Preheat grill or grill pan to medium heat. Coat with cooking spray. Place chicken skewers on grill and cook for 5-10 minutes, flipping once, until cooked through.

6. Meanwhile, make dipping sauce. In a medium bowl, combine peanut butter, soy sauce, brown sugar, ginger and red chile paste. Mix well. Slowly add in water, a little at a time, and mix to combine. Add more water if too thick (should be consistency of a thick dressing).
7. Transfer chicken skewers to a serving platter and serve with peanut dipping sauce.

Makes 4 skewers.
