QUICK + EASY ENTERTAINING TIPS

chicken quesadilla

This is a quick and easy recipe to make with store-bought rotisserie chicken.

2 teaspoons extra virgin olive oil, divided
2 tablespoons finely diced onion
Salt, to taste
Freshly ground black and pepper
1 small clove garlic, finely minced
1/2 cup rotisserie chicken, shredded
1/4 cup Monterey jack cheese, grated
1 tortilla, cut in half

1. In a medium sauté pan, heat 1 teaspoon oil over medium heat. Add onion and cook until onion is translucent, 5-7 minutes. Season with salt and pepper. Add garlic and cook for another 1-2 minutes. Allow mixture to cool slightly then add to a mixing bowl along with chicken. Stir in cheese.
2. Preheat grill or grill pan to medium heat. Brush outsides of tortilla with remaining 1 teaspoon olive oil. Flip over tortilla halves and place chicken mixture on one side of tortilla. Gently press halves together to make a sandwich. Grill for 3-4 minutes, turn and grill for another 2-3 minutes, until cheese is melted and tortilla is lightly charred on both sides. Cut into wedges and serve warm.

Serves 1.
