blue cheese straws | photo by: James PadillaPuff pastry can be found in the freezer section of most markets. This is a quick and easy appetizer that’s light and flaky from the dough. Tangy blue cheese works well here but it also works really well with freshly grated Parmigiano-Reggiano.

Cooking spray, for greasing
7-8 ounces puff pastry (1/2 of one package), thawed in refrigerator for 1-2 hours
2-3 ounces creamy Gorgonzola or other blue cheese, at room temperature and crumbled
Salt, to taste
Freshly ground black pepper

1. Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly coat with cooking spray. Set aside.
2. Gently roll out puff pastry into a rectangle about 1/4-inch thick. Cut pastry into 8 equal strips. Working quickly (dough will get soft if left out for too long), spread blue cheese crumbles over puff pastry, covering each strip top to bottom with cheese, taking care to keep cut lines visible. Gently press cheese into puff pastry strips to adhere. Season strips with salt and pepper.
3. Gently twist each strip, one at a time, enclosing as much cheese as you can and place on baking sheet. Fold over each of the ends to make a clean edge. Repeat with remaining strips.
4. Bake for 8-10 minutes, until straws are lightly golden brown. Allow to cool slightly before serving.

Makes 8 straws.
