QUICK + EASY ENTERTAINING TIPS

blue cheese crostini with fig jam

This recipe was inspired by a pizza that I had at one of my favorite local restaurants. It’s a quick and easy appetizer that’s a really nice combination of flavors. The sharp bite of the blue cheese balances really well the sweetness of the fig jam.

2 1/2-inch thick slices French baguette, sliced on a diagonal
2 ounces creamy Gorgonzola or other blue cheese
2 teaspoons prepared fig jam
Freshly ground black pepper

Preheat grill or grill pan to medium heat. Grill bread slices until golden brown, 2-3 minutes per side. Spread each slice with equal parts blue cheese, and then top each with fig jam. Season with pepper and serve.

Serves 1.
