QUICK + EASY ENTERTAINING TIPS

black olive aioli

This is a modified version of a traditional aioli, which is usually made with egg yolks. You can use pitted black olives instead of the tapenade if you prefer.

1/2 cup mayonnaise
2 tablespoons freshly grated Parmigiano-Reggiano
1 1/2 tablespoons black olive tapenade
1 clove garlic, roughly chopped
Salt, to taste
Freshly ground black pepper

In a food processor, combine ingredients until well blended. Transfer to a serving bowl and refrigerate until ready to serve.

Makes approximately 1/2 cup.
