QUICK + EASY ENTERTAINING TIPS

black bean soup with cilantro-lime sour cream

Thick and hearty, this black bean soup is a great way to make a quick soup out of ordinary pantry ingredients. The cool, refreshing sour cream is a perfect condiment served right on top. For a milder soup, remove the seeds from the jalapeño.

1 tablespoon canola oil
1/4 red onion, diced
1 small clove garlic, finely diced
1 teaspoon finely diced jalapeño
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
1/8 teaspoon chile powder
Salt, to taste
Freshly ground black pepper
1/2 15-ounce can black beans
1/2 cup low-sodium chicken or vegetable stock

Cilantro-Lime Sour Cream
1 tablespoon sour cream
Juice from 1/2 lime
1 teaspoon finely minced cilantro

1. In a medium saucepan, heat oil over medium heat. Add onion, garlic, jalapeño, cumin, coriander and chile powder and cook for about 5 minutes, until onions are translucent. Season with salt and pepper. Add black beans and their juices and stock. Bring to a boil, cover and reduce heat to low. Simmer for 30 minutes.
2. Meanwhile, in a small bowl, combine ingredients for cilantro-lime sour cream and set aside.
3. Using a potato masher, mash about half of soup, leaving some of the beans intact. Add more stock if soup is too thick. Season with salt and pepper. Adjust seasonings if necessary. Ladle into bowl and top with cilantro-lime sour cream.

Serves 1.
