QUICK + EASY ENTERTAINING TIPS

baked brie en croute

I love any recipe that involves melting cheese and this one is pretty dramatic. If you’ve never made it before, it’s really one to try and it will impress your guests for sure. A round of brie is wrapped in puff pastry and then baked until puffed and lightly golden brown on the outside. When it’s served, you get perfect little slices of gooey cheese coming out of the pastry and it’s pure magic. Adding in a flavored chutney makes it a perfect one stop appetizer with no need for anything else, except lots of good crusty bread for sopping it all up.

Flour, for dusting
7-8 ounces puff pastry (1/2 of one package), thawed in refrigerator for 1-2 hours
1 8-ounce round Brie cheese
3-4 tablespoons prepared mango chutney
1 egg, beaten
French bread, for serving

1. Preheat oven to 375°F. Line a baking sheet with parchment paper and set aside.
2. Place dough on a lightly floured work surface and place cheese in center of dough. Place mango chutney on top of cheese, covering entire surface. Fold dough up and over sides of cheese, pleating as you go, making sure to tightly secure cheese inside. Pinch dough in center to seal (seal with prevent cheese from oozing out during baking). Trim off any excess dough and discard. Transfer dough to prepared baking sheet and brush with egg. Bake for 30-40 minutes, until lightly golden brown. Allow to rest 5-10 minutes before serving.

Serves 10-12.
